Deep in the Jura mountains, the Comté tradition has been passed down for centuries. Our affineur, Monsieur Guillemin, visits each wheel monthly — tapping, turning, tasting. Only wheels that pass his exacting standard are selected for Martème’s reserve selection.
Each wheel ages in cellars carved from limestone, where the humidity and temperature create conditions no industrial facility can replicate. The result is a cheese that tells the story of its place.
